Learn how to make the best 'Street Style - Egg Mughlai' with our chef Varun Inamdar.<br /><br />Egg Mughlai is a 3 Layer egg recipe which is typically a gift from the streets. It is basically a stack of Omlet, 2 types of gravy and Sunny-side up which taste's heavenly together.<br /><br />Ingredients for Omelette:<br />(Serves 2)<br />- 1 Egg <br />- 1 tbsp Onion(chopped)<br />- 1 tbsp Tomato(chopped)<br />- 1 Green Chilli(chopped)<br />- Salt<br /><br />Ingredients for Tomato Gravy:<br />- Butter<br />- 1/4 cup Onions <br />- 1 Green Chilli(chopped)<br />- 1 tsp Garlic Paste<br />- 1/8 cup Tomatoes(chopped)<br />- 1/4 tsp Garam Masala<br />- Water<br />- Salt<br /><br />Ingredients for Egg Gravy:<br />- 1 tbsp Butter<br />- 1 Egg(boiled & chopped)<br />- Salt<br />- 2 Green Chilli Pepper<br /><br />Ingredients for Sunny Side Up(Half Egg Fry):<br />- 1 tsp Butter<br />- 1 Egg<br />- Salt<br /><br />Ingredient for Egg Mughlai:<br />- 1 Egg(boiled)<br />- Tomato Gravy<br />- Egg Gravy<br />- Sunny-Side Up<br /> <br />Method:<br />1. Take the egg in a small bowl and add chopped onion, chopped tomato, chopped green chilli and salt <br />2. Now heat a pan and add butter to it<br />3. Whist the egg mixture and add it to the pan over butter, to make a basic omelet<br />4. Cook it on both the sides and keep it in a serving plate<br />5. Now again in the same pan, heat butter and add chopped onions, chopped green chilli, garlic paste and saute it for around a minute, till the raw smell of garlic goes away <br />6. Add chopped tomatoes, red chilli powder, garam masala; and once they are mixed together, add water to the mix <br />7. Now mash these masalas using a potato masher <br />8. Add salt to this mix, and allow it to mix over a low flame till it is perfectly cooked <br />9. Till then, take boiled egg; slice it and place it all over the omelet<br />10. Once the gravy is cooked, add it over the omelet <br />11. Now in the same pan, melt butter again and add boiled & chopped egg, salt, green chilli pepper<br />12. Toss it and allow the egg to cook, till it turns creamy<br />13. Add this on top of the tomato gravy<br />14. Now in the same pan again, melt butter, and then, add egg <br />15. On the upper side add salt, along with the extra butter in the pan, over the egg <br />16. Now, add the sunny side up over the egg gravy
